Chicken for Caldo

The traditional meal, which is still prepared by Maya women in communities in the south, has as its main ingredient local chicken meat cooked a soup with added ingredients such as onion, garlic, achote and salt.

In some instances potato and cabbage are added.  It is served with poch or hot corn tortillas.

Caldo is often times served at weddings, birthdays and at funerals.

It is a wholesome, balanced mean that is sure to tickle the taste buds of anyone willing to give it a try.
