Meet Elsie and Jeffrey Ellis of Ellis Coconut Oil Production

By Caribbean Agriculture Research and Development  Institute (CARDI) Team:  Ellis Coconut Oil Production is a family owned business in Belize.

Owned by local Belizeans Elsie and Jeffrey Ellis, the operation was established 9 years ago.

The couple started their enterprise by producing 12 bottles of coconut oil a week. Today, they produce more than 100 bottles per week.

Their product is sold directly to customers at the farmer’s market, to restauranteurs, and locals who reside abroad. Twice a month they also supply approximately 60 bottles of coconut oil to neighboring Guatemala.

The Ellis’ pride themselves in their product since it uses ingredients and practices taught to them by their ancestors.

The family plans to increase production to 200 bottles a week by adding another machine for grinding, improving their infrastructure, and engaging in some structured marketing and promotional activities.

As a small processor and a member of the Coconut Stakeholders Platform in Belize, the Ellis’ have become more aware of the health and food safety standards and requirements for packaging and labeling.

According to them, they have seen an increase in demand for coconuts over the last few years, and by being part of the platform they have been able to link with small producers to get a steady supply of quality seednuts. Through this, they been able to maintain their production cycle.

Elsie says that by processing coconut oil they have been able to support and provide a good quality of life to their family.

The couple has pledged their support to the Coconut Stakeholders Platform and the Regional Coconut Development Project and remain optimistic for planned future activities.
