By Rubén Morales Iglesias: “We can have potatoes throughout the year,” and better French fries said Jose Abelardo Mai, Minister of Agriculture, Food Security, and Enterprise (MOA), after visiting a potato storage unit in Barton Creek during his two-day tour of the West.
While he encountered lots of potatoes at Springfield, it was at the potato storage in Barton Creek that made Mai come out thinking about how to improve French fries.
“I’m looking at the French fries,” he said. “Somebody said to us just now that if we store our potatoes for three months at the appropriate temperature, that potato French fry will be of even better quality. So again, I’ve given instructions to the Food and Science Department, for the processing sector to start looking at it immediately.”
“If we can find a way to store potatoes at an economic cost, we can have potatoes throughout the year,” said Minister Mai.
“The need for processing our potatoes is critical. And we are working on that right, right now,” Mai said.
Mai has been listening to the MOA extension officers and technicians who work closely with the farming communities.
Mai said he learned a lot from the experts in the different fields.
“You listen to the experience they have and their knowledge in certain areas. There’s a need for value adding, there’s a need for proper storage, there’s a need for new technology. And, this gives me a lot of good ideas,” Mai said.
