Got cooking skills? Harvest Caye Belize is hiring

By BBN Staff: Belize Island Holding Limited (BIHL), the parent company of Harvest Caye Belize, is looking for people with good culinary skills to join its team as Head/Line Cooks and Prep Cooks.

The Head, Prep, and Line Cooks will be responsible for preparing, organizing, and storing food with proper documentation, while following Hazard Analysis Critical Control Point (HACCP) regulations and procedures. Cooks will need to ensure that all food is freshly prepared and is of the highest quality for all facilities of the establishment, and will also need to ensure that food is prepared according to the preparation sheets and recipes provided with no deviations.

Cooks will also be required to prepare in advance for service as indicated and needed; be responsible for mise-en-place, and food service for station; maintain an organized and efficient flow of production, with regards to changes in forecasts and menus; consistently check the temperature in foods and follow proper procedures regarding chilling, re-heating, and holding food; and serve tasteful and eye appealing food items following provided recipes, while following established food time control management guidelines.

Among their list of duties, cooks will be expected to complete food temperature checks at each meal and record the results in temperature logbook as instructed; complete preparation and productivity records as specified by production system and store food items properly at the close of meal service. Cooks are also expected to follow safety and sanitation rules and practices when cleaning work area and equipment used in food preparation.

Interested applicants will need to have a minimum of a High School Diploma or foreign equivalent, with intermediate level English verbal and writing skills, including the proper use of English grammar. Applicants will also need a minimum one year experience professionally roasting, broiling, braising, sautéing, frying, and grilling food, (including breakfast items), and a minimum one year experience working in a food production and/or line capacity. A minimum one year experience in a high-volume hot production operation is required, but formal culinary training may substitute at an equivalent rate.
