By Rubén Morales Iglesias: Last Friday, the Ministry of Agriculture, Food Security, and Enterprise’s (MAFSE) Agro-processing Unit from Central Farm visited Ayin Ha (Crocodile Water) in Lemonal to share the preparation processes for preserving vegetables.

The representatives from the MAFSE Agro-processing Unit explained the details of preserving and preparing veggies to the staff and owner of the resort who engaged in meal preparation and sauce production.

“Ayin Ha is located on the outskirts of Lemonal Village in the Belize River Valley,” said MAFSE. “The resort is one of the few locations in Belize where agriculture and tourism work hand in hand … the resort is located in the middle of a farm that harvests soursop, hot pepper, and various other vegetables. Its owner, Larry Flowers, believes agro-tourism is the way to go in Belize.”
