New Italian dinner menu launched at The O restaurant at Las Terrazas was to fill a need that guests were expressing

By Benjamin Flowers: Patrons at the O Restaurant, located at Las Terrazas Resort in North San Pedro Town, now have full access to the new Italian dinner menu following the official launch event last night.

The launch was an open-air event that happened simultaneously at the Las Terrazas poolside and the O’s Rooftop Sky Lounge with a special tasting of the items on the new menu for attendees.

General Manager of Las Terrazas Resort Stephen Calland said that the decision to transition to the Italian menu was taken to fill a need that guests were expressing.

“We were looking around, we did our research and there was a need for something authentic Italian,” Calland said. “We’ve got a chef who’s worked in Italy twice and is classically trained, and he’s lived in the Caribbean as well.”

Calland said that the resort, which is under new ownership, rolled out the new menu spearheaded by new Executive Chef Darren Pryer, keeping with the spirit of new beginnings.

Pryer said that the new menu is comprised of offerings that draw their flavors from the use of fresh herbs and plenty of seafood.

“There’s a lot of cream, a lot of cheese that we use. We have three pasta dishes and a rice dish. We’ve got things on the menu that you’d find in every restaurant on the coast of Italy,” Pryer said.

The all-Belizean kitchen staff also makes the pastas and the majority of the sauces in-house using local ingredients wherever possible.

The Italian courses are available from 5:30 p.m. to 9:00 p.m. The O Restaurant also maintains its breakfast and lunch menus, which feature a combination of international and local dishes.
