By Benjamin Flowers:Construction has begun to rebuild Ella’s Cool Spot, the popular Hopkins Village restaurant that burned down back in June.
Hopkins Uncut posted the update this week, noting that the construction began on Thursday, August 4, and that the restaurant owner, Ella Carr, is extending a heartfelt thanks to everyone that supported the fundraising efforts to rebuild.
Authorities and community members rushed to try and contain the fire in the early morning of June 21, but despite their best efforts, the restaurant was beyond saving. In the aftermath of the fire, it was learned that the fire was a malicious act of arson, by a perpetrator that remains at large.
Carr, who explained that the fire had robbed 12 families of their means to earn a living, set out with the support of friends, loved ones, her village, and the business community and other entities to raise funds to rebuild, first through a Gofundme page, and then holding several fundraiser events including the highly successful Ella’s Cool Spot Must Come Back beach bash, a two-day event in late July.
“We would like to express special thanks to: everyone who donated cash or manual labor; anyone who invited friends to participate or attend the event; our generous friends and supporters; and All Belizeans and foreigners who made it all the way to Hopkins to show support and give a warm hug and best wishes,” Carr said.
In a show of her commitment to getting her business up and running once again, Carr even took part in the construction work on the foundation.
